Cauliflower Rice & Chicken Meal



  • 1 Package cauliflower rice

  • 1 Boneless / Skinless chicken breast (sliced)

  • 1 Small zucchini chopped into small pieces

  • 1/4 Cup diced red onion

  • 1/2 Cup chopped spinach

  • 1 Small beefsteak tomato

  • 4 Tbsp vegetable oil

  • Salt and Pepper to taste


  1. Chop, slice, dice your vegetables accordingly. Feel free to mix together when done and place in the same container.

  2. Cut the chicken into small slices.

  3. In a small pan, on medium-high heat, heat 2 Tbsp of oil and cook the chicken for about 5-7 minutes (if cooking too fast lower to medium heat and if not quite done, cook a little longer). Sprinkle on your seasoning at this time.

  4. While the chicken is cooking, in a separate large pan, heat 2 Tbsp of oil on medium-high and add in your veggies and cauliflower rice and cook for 5 minutes (or until done).

  5. Once the chicken is thoroughly cooked and the rice and veggie mix is complete, you are ready to serve.
