Cajun Seafood

INGREDIENTS

  • 1lb oysters

  • 1lb clams

  • 1 teaspoon cayenne pepper

  • 1 teaspoon garlic powder

  • 2 teaspoons paprika

  • 1 tablespoon thyme

  • 1 tablespoon oregano

  • 2 tablespoons vegetable oil

  • 2 cups organic vegetable broth

  • 1 small can of tomato paste

  • White rice (your choice of amount - typically 1 cup)

DIRECTIONS

  1. In a pan, heat the oil until it's shimmering

  2. Slowly stir in all ingredients EXCEPT the oysters and clams and cook for 30 seconds

  3. Put the oysters and clams in the pan and cook on medium until they are done (opened)

  4. While cooking these ingredients, you'll want to also be cooking the rice.

  5. In a medium sauce pan, put in 1 cup rice and 2 cups water and bring to a boil over high heat

  6. Once boiling, bring to a simmer, cover and let cook until the rice is tender (15-25 minutes depending on the freshness of the rice)

  7. When done cooking, you can mix the rice and seafood together or eat separately (your choice)
