Asian Vegetable Noodle Soup

  • 16 oz Organic beef broth

    • Can substitute for ​organic vegetable or chicken broth

  • 2 Cups water​

  • 4 Organic cremini mushrooms (sliced)​

  • 1 Small package organic rice noodles

  • 1 Organic green onion (chopped)

  • 1 Organic garlic clove (chopped)

  • 1 Tbsp diced organic parsley

  • 1 Tbsp diced organic chives

  • 1 Tbsp vegan fish sauce

  • 2 Tbsp organic low sodium soy sauce

  • 1 Tbsp fresh squeezed organic lime juice


  1. In a medium to large pot, heat the beef broth, water, fish sauce, soy sauce and noodles on medium-high heat until the noodles start to soften.

  2. Stir in the mushrooms and garlic, reduce heat to low-medium and let cook for 10-15 minutes.

  3. Next, slowly stir in the remaining ingredients and cook for 5 minutes
