Asian Vegetable Noodle Soup

INGREDIENTS

16 oz Organic beef broth
-
Can substitute for organic vegetable or chicken broth

2 Cups water
-
4 Organic cremini mushrooms (sliced)
-
1 Small package organic rice noodles
-
1 Organic green onion (chopped)
-
1 Organic garlic clove (chopped)
-
1 Tbsp diced organic parsley
-
1 Tbsp diced organic chives
-
1 Tbsp vegan fish sauce
-
2 Tbsp organic low sodium soy sauce
-
1 Tbsp fresh squeezed organic lime juice
DIRECTIONS

In a medium to large pot, heat the beef broth, water, fish sauce, soy sauce and noodles on medium-high heat until the noodles start to soften.

Stir in the mushrooms and garlic, reduce heat to low-medium and let cook for 10-15 minutes.

Next, slowly stir in the remaining ingredients and cook for 5 minutes
